Cupakes de piña colada y adios a La Guinda del Pastel
6.9.17Una deliciosa combinación alcohólica y afrutada para brindar en la despedida de este blog.
Pues si, digo adiós a La Guinda del Pastel y como no podría ser
de otra manera, lo hago con una receta de cupcakes que tantas alegrías,
descubrimientos, pasiones e incluso viajes me han proporcionado estos
últimos años.
Fue también un mes de febrero, pero de 2011 cuando nació este blog. Hasta hoy (2017) han sido 6 años muy intensos, es ahora mirando hacia atrás cuando veo con perspectiva todo lo que me ha supuesto la decisión de comenzar a escribirlo. Ni por asomo me podía haber imaginado todo lo que me iba a suponer. La razón principal por la que comencé fue derivando y cambiando, literalmente he ido haciendo camino al andar.
He tratado también de transmitir humildemente todo lo que yo había aprendido en los innumerables talleres presenciales de decoración de cupcakes que impartí y que me ha proporcionado muchísima satisfacción. Cada alumna y alumno (varios centenares) me han enriquecido enormemente como persona y tengo que decir que disfruté muchísimo en cada uno de ellos.
Pero ahora ha llegado el momento de pasar página, necesitaba cerrar esta etapa. La repostería creativa y las cupcakes ocuparon lugar muy importante para mi, pero mis intereses ya no son los mismos. A veces conviene cerrar puertas para no estancarse, más bien se convierte en algo imprescindible para poder avanzar y continuar, pero no es tan fácil tomar esa decisión.
Termino con muy buen sabor de boca. Pongo el broche de oro con estas palabras de una de mis alumnas que me han emocionado y me hacen ver que todo el esfuerzo ha merecido la pena:

Aquí quedan todas las recetas publicadas y espero que a cualquiera que aterrice por aquí en algún momento le puedan servir, pero La Guinda del Pastel ya no seguirá creciendo mas, esta será la última receta que voy a publicar:
CUPCAKES DE PIÑA COLADA
10 unidades
INGREDIENTES:
- 100 ml de ron blanco
- 30 gr. de azúcar
- 40 gr. de mantequilla
- 140 gr. de azúcar
- 115 gr. de harina
- 1 y ½ cucharadita de levadura ( tipo Royal)
- 1 cucharada de coco rallado
- 1 huevo XL
- 1 yogurt de sabor coco
- 4 rodajas de piña en lata (en su jugo)
PREPARACIÓN:
Precalentar el horno a 160º con la rejilla en el medio y calor arriba y abajo.
Preparar una bandeja de cupcakes con 10 cápsulas de papel.
En un cazo pequeño poner a calentar el ron con el azúcar y dejar hervir despacio hasta que reduzca el líquido a la mitad, aproximadamente 5 o 6 minutos. Retirar de fuego y reservar hasta que enfríe.
Cortar la piña en trocitos lo mas pequeños que se pueda. Añadir al líquido que teníamos enfriando.
En un bol mezclar la mantequilla, el azúcar, la harina, la levadura y el coco. Usar un tenedor para aplastar la mantequilla hasta integrar y obtener una mezcla granulada como migas de pan.
En otro bol mezclar el yogur de coco con los huevos.
Añadir a la mezcla de ingredientes secos que teníamos.
Colar la piña reservando el líquido de macerar para luego almibarar.
Añadir los trozos de piña y mezclar.
Repartir la masa entre los moldes. (no sube mucho)
Hornear unos 25 minutos.
Sacar del horno y de la bandeja, pasarlas a una rejilla para enfriar. Cuando las cupcakes aún estén calientes añadir dos cucharaditas del líquido reservado.
Están riquísimas así sin mas la verdad que no necesitan ninguna crema pero por supuesto a libre elección del comensal que al fin y al cabo es lo bueno de hacer nuestra propia repostería en casa.
Y como bien dice el dicho:
donde una puerta se cierra, otra se abre...
Aquí va mi nueva hoja de ruta por donde discurrirá mi camino a partir de ahora. Sigo con gastronomía y también escribiré alguna que otra receta pero tengo ganas de contar mas, mucho mas y sobre todo de hacerlo de otra manera, con otra perspectiva y a través de una nueva mirada.Los motivos y pasiones que ahora me mueven son otros pero sigo siendo yo.
